Simple Vegetarian Tom Kha Soup

I’ve always been a fan of coconut. Growing up in India I used to relish slurping coconut water from a young coconut sliced open in font of me by a machete yielding vendor. After sucking out every last refreshing drop, I’d hand the coconut back so he could masterfully chop up the shell and scrape out the slippery young coconut flesh. This is called “malai” because it’s as tender and thin as the skin formed on top of pipping hot milk as it cools. I love coconut malai.

Punjabi Kadhi with Pakoras

On August 5th a tragic shooting occurred in Wisconsin, US. For those of you who don’t live in the US, a Sikh temple was attacked and 6 Sikhs were shot and killed. It reminded me again of how fragile our world is. In what probably felt like an eternity for the victims, but in actuality just few minutes, lives were taken. Lives of loved ones. Lives.

The Sikhs as a community are one of the most loyal and jovial people I’ve ever come across. I’ve known many Sikhs in my life and every interaction with any one of them has left me smiling. I still remember the first Sikh I ever really interacted with. She was a girl in my 5th grade class in southern California. I was amazed with her thick hair that flowed down past her waist. At the time I had no clue of how to deal with hair even longer than my shoulders. Heh, I still remember asking her how in the world she managed it. The answer – pretty much she just could and thought of no reason why I couldn’t do the same.

Sikhism, the religion of Sikhs and the temple that was attacked has it’s origin in 15th century Punjab (now the state of Punjab in India and Pakistan). As most religions, you can find people practicing Sikhism all over the world. However, India still has the largest population of Sikhs followed by UK, Canada and the United States.

Lentil Spinach Soup

I know this is going to sound really geeky but for most of the year when I was on SCD I maintained an excel spreadsheet to monitor my recovery. Well, at the time it was to monitor my sickness really. Once I decided that what I ate was affecting me for better or for worse, I knew I had to track what I ate. It was a pretty simple spreadsheet:

Recently I had a reader reach out to me about starting SCD. She asked me what I ate during the first week. Many of you are thinking — just do what the book says! Well, its not so simple if you’re vegetarian. Yup, I did SCD diet while being primarily vegetarian. Anyhow, since it’s been quite some time since I started SCD, my memory on it was pretty bleak. Luckily I still had my spreadsheet and could tell her exactly what I ate and the recipes that went with it!

Creamy Tomato Soup Without the Cream

Sick, stuffy and sluggish – that pretty much describe me right now. I think I have the flu. Ugh. But .. but!! The benefit of being sick is that I get to drink lots and lots of soup. It’s one of my favorite stuff to make and eat (even when I’m not sick). And it’s also one of the few food items that soothes me when I’m not feeling well. Especially creamy soups. It’s quite literally comfort in a bowl.

One unique thing you’ll notice about this tomato soup is the inclusion of Calabash. Calabash is a popular squash in India. It’s known regionally as “Lauki” or “Dudhi”. I generally eat it diced and cooked in Indian spices. In this recipe I use it as a thickener. It’s what makes this soup thick and creamy without the need for any cream. I can hardly stand diary when I’m seriously sick. So it really is a perfect recipe for this week! Also I think it’s more nutritious than using cream or a thickener like corn starch.

Until recently, I only could find this squash in Indian grocery stores. But since last year, I’ve seen it at Whole Foods quite regularly. Read More
