Jalapeno Popper Cups

I love Jalapeno Poppers! My first experience with them was when I was a day old in the US… 🙂 An international student from India in Chico, California who was amazed at the warmth of not just the weather but the people of California. I was a week from starting my masters program and was just taking in the sights and sounds of this new place. Not having enough money meant I was either cooking all my meals or eating at Taco-Bell and Jack-in-the-Box. Up until then I hadn’t really missed the spicy foods of India, but my first bite into a Jalapeno popper and I was reminded of the awesome spicy-ness that I had grown up with. These felt like mirch (thai chili) pakoras (fritters) and helped with the home-sickness that would hit me from time to time.

Fast forward to today… When I have friends over, I’m all about simple finger foods, that don’t need too many plates and napkins, just easy food that you can pick up and pop into your mouth. My discovery of the Mini Fillo shell cups is an amazingly fulfilling one. I’ve made Baklava Phyllo Cups and Paneer Tikka Phyllos with them and frankly, the possibilities are endless!

Punjabi Kadhi with Pakoras

On August 5th a tragic shooting occurred in Wisconsin, US. For those of you who don’t live in the US, a Sikh temple was attacked and 6 Sikhs were shot and killed. It reminded me again of how fragile our world is. In what probably felt like an eternity for the victims, but in actuality just few minutes, lives were taken. Lives of loved ones. Lives.

The Sikhs as a community are one of the most loyal and jovial people I’ve ever come across. I’ve known many Sikhs in my life and every interaction with any one of them has left me smiling. I still remember the first Sikh I ever really interacted with. She was a girl in my 5th grade class in southern California. I was amazed with her thick hair that flowed down past her waist. At the time I had no clue of how to deal with hair even longer than my shoulders. Heh, I still remember asking her how in the world she managed it. The answer – pretty much she just could and thought of no reason why I couldn’t do the same.

Sikhism, the religion of Sikhs and the temple that was attacked has it’s origin in 15th century Punjab (now the state of Punjab in India and Pakistan). As most religions, you can find people practicing Sikhism all over the world. However, India still has the largest population of Sikhs followed by UK, Canada and the United States.

Lazy Apple Oatmeal Crisp (Gluten Free)

When I first moved to snow country the one piece of advice that was repeated to me over and over again was “the key is layers”. “The key is layers”. “The key is layers”. When it comes to snow, the key really is layers. And honestly it’s really hard to forget the mantra. The moment you do, a gush of cold wind will find the tiny crack between your pants and sweater and that’s the end of your warmth and the end of forgetting that “the key is layers”.

My little brother (L-bro) is visiting me right now. And as all the guests who visit me – he must, absolutely must, cook either for me or at least with me. It’s my very own private continuing education. This summer alone I’ve learned so much; like a way better way to cut coriander. I will have to share that the next time I have a coriander based recipe to share with you. Anyhow, coming back to my brother. L-bro loves to cook. Err.. Let me correct that. Lately L-bro loves to cook something new. So today we decided to make apple pie since neither one of us has ever made it. After putting google’s system to the max with our “apple pie” searches, we decided we were much too tired (read: “lazy”) to deal with making a crust.

I know this is going to sound really geeky but for most of the year when I was on SCD I maintained an excel spreadsheet to monitor my recovery. Well, at the time it was to monitor my sickness really. Once I decided that what I ate was affecting me for better or for worse, I knew I had to track what I ate. It was a pretty simple spreadsheet:

Recently I had a reader reach out to me about starting SCD. She asked me what I ate during the first week. Many of you are thinking — just do what the book says! Well, its not so simple if you’re vegetarian. Yup, I did SCD diet while being primarily vegetarian. Anyhow, since it’s been quite some time since I started SCD, my memory on it was pretty bleak. Luckily I still had my spreadsheet and could tell her exactly what I ate and the recipes that went with it!
