Jalapeno Popper Cups

I love Jalapeno Poppers! My first experience with them was when I was a day old in the US… πŸ™‚ An international student from India in Chico, California who was amazed at the warmth of not just the weather but the people of California. I was a week from starting my masters program and was just taking in the sights and sounds of this new place. Not having enough money meant I was either cooking all my meals or eating at Taco-Bell and Jack-in-the-Box. Up until then I hadn’t really missed the spicy foods of India, but my first bite into a Jalapeno popper and I was reminded of the awesome spicy-ness that I had grown up with. These felt like mirch (thai chili) pakoras (fritters) and helped with the home-sickness that would hit me from time to time.

Fast forward to today… When I have friends over, I’m all about simple finger foods, that don’t need too many plates and napkins, just easy food that you can pick up and pop into your mouth. My discovery of the Mini Fillo shell cups is an amazingly fulfilling one. I’ve made Baklava Phyllo Cups and Paneer Tikka Phyllos with them and frankly, the possibilities are endless!

Sugar Free Sunday & Nutrition Facts

Welcome to one of the sweetest weekly virtual potluck get-together ever! Yes indeed β€” it is Sugar Free Sunday! We host it every Sunday to exchange incredible sugar free recipes. Inspiration to start the week right? You bet!

A while back I was writing up a post about the maximum amount of sugar a person can consume in a day. Since then I’ve kept a tab on the ingredients list that I come across while doing my groceries. A couple of months back it hit me… *drum roll please* Sugar is listed under carbohydrates on the nutrition facts and does not have its own independent %DV! Why the drum roll you ask? Because… You might read the carbohydrates, see the total percentage of calories consumed and go.. “Haah, I’m good” but actually you’ve been hit with double, maybe three times, the amount of added sugar that you should be consuming.

The daily allowed value of added sugar for men is: 9 tbsp (45 gms) and for women is: 6 tbsp (30 gms). *

Now take a look at this image and see what is wrong? **

Sugar Free Sunday & India Trip Notes

Welcome to one of the sweetest weekly virtual potluck get-together ever! Yes indeed β€” it is Sugar Free Sunday! We host it every Sunday to exchange incredible sugar free recipes. Inspiration to start the week right? You bet!

I sort of fell off the grid in the last few weeks and apologies for that. I’m hoping I can make up for it by finally posting my notes from my India trip, and these two amazing shots.

This first picture gives you a view of the resort that I stayed at when I visited Parvati valley, India, in May this year. It was one of the most peaceful places that I’ve been too in a long, long time!
