Cherry Tomato Salad on Bagel Chips

So I just made up a random name… I had no clue what to call this thing! Tomatoes on a chip? Basil-Tomato mix on a bagel chip?

My family had a crazy amount of tomatoes, fresh, from our garden this summer. Add to that my son AND hubby dearest are huge tomato fans… needless to say, I thought we sort of went over the top, but I don’t think either of them will agree with me 🙂 The classic combination of tomatoes and basil with olive oil and balsamic vinegar was a staple in my household this entire summer! H is the official tomato basil salad maker of the house! But on this one occasion, we were starving around 4 in the afternoon after having had a light Saturday brunch, and didn’t know what to snack on. I saw our pretty little cherry tomatoes, and ofcourse my pre-programmed brain thought of basil and our usual… but to give it some pizazz I thought of topping them off onto bagel chips… so tadaa! We ate healthy, and tamed our devilish cravings to go all out on junk food by having some chips in there! A good compromise! 😀

You’ll notice, I have a lot of “to taste”, handful”, “drizzle” in this recipe, but this is such a staple in my house, and varies with the taste of the tomatoes, that I decided to post this anyways! It could always work as an idea, instead-of, a to-the-T recipe, right? 😛

Cherry Tomato Salad on Bagel Chips

Makes: 2 servings
Prep Time: 5 minutes

Ready in: 5 minutes


  • 1 cup cherry tomatoes
  • 10-12 bagel chips (gluten free chips if GF)
  • handful of basil
  • drizzle of olive oil
  • drizzle of balsamic vinegar
  • crushed black pepper to taste
  • sea salt to taste


1. Wash and pat dry the tomatoes. Here is a bag of the bagel chips that I picked up at Trader Joes.

2. Slice the cherry tomatoes in half. Since they tend to roll around on the chip a bit, I’m going to chop each cherry tomato into 4 pieces next time.

3. Wash and pat dry the basil.

4. Chop the basil finely.

5. In a mixing bowl, add the chopped cherry tomatoes, basil, olive oil, balsamic vinegar, salt and pepper to taste. Toss well and adjust seasoning. You want to add a bit more of balsamic vinegar than you usually have in the salad, to balance the saltiness of the bagel chip!

6. Top a bit of the mix onto each chip.

7. I had some salad left over, which I lapped down pretty quick! Enjoy!
