Asparagus Cashew Stir-fry
I’ve found that a little fantasy is a great way to remain grounded and inventive. In some ways this is why I love cooking. With this recipe, I’d like to share with you a quick trip through parts of my imagination. I hope you enjoy this and the recipe.
Mincy looked up fondly at the brilliant blue sky dotted with light, white, floating puffs which were clearly the trail left behind by her pet Enda. It had been two weeks since her fire-breathing love disappeared. Two weeks since she felt the air whipping through her silver locks while soaring on the back of her powerful beast.
For now, she would have to walk. Mincy brought her gaze back on the field in front of her. It was filled with magnificent green arrows. Someone had taken painstaking effort to pierce the earth with them. Reaching down, she pulled one out of the ground. “Unusual arrow.”, she mumbled. She quickly spun around when she heard the laughter behind her. The stranger stood with a basket of the arrows swinging from his shoulder. “It’s an asparagus, not an arrow!”, he howled, “However, it will still suit you well as I see you are a soldier – a perfect meal for someone who has little time to spare.”.
Dinner at the stranger’s home was warm and delicious. Mincy had to agree, the asparagus did make a perfect meal for her. She was glad she ran across this strange arrow field and couldn’t wait to share the crunchy treat with Enda.

Asparagus Cashew Stir-fry
Makes: 4 servings
Ready in: 20 minutes
Ingredients
- 1 bunch of asparagus
- 1/2 cup cashews
- 1 inch of fresh ginger (roughly 1 tablespoon once minced)
- 1 tablespoons olive oil
- 1 tablespoons seasame oil
Directions
1. Wash and trim the asparagus. Trim by bending the stem end of the asparagus until it snaps. Discard the part that snapped off.
2. Peel and mince the ginger; it should be roughly 1 tablespoon.
3. In a non stick pan, heat the olive and sesame oils over medium heat.
4. Add the ginger and stir-fry until it turns brown.
5. Add asparagus and stir-fry for about a minute.
6. Add the cashews, breaking some of them roughly with your hands if you’re using whole cashews.
7. Stir-fry till the asparagus becomes bright green and is tender but still crisp. The cashews should be lightly browned.
Asparagus is not avail in Pune, but I cant wait to try it when I come to USA, crunchy cashews with ginger – that I can try, they have lots of receipes with cashew gravy in indian vegies, they taste great ofcourse.

Many Californians don’t know this but California is actually one of the few heartlands of asparagus farming in the US (and probably the world). Northern California even has an asparagus festival! Anyhow, I do hope you get to enjoy asparagus soon. You might want to look in the frozen section if fresh asparagus aren’t available. Or grow your own — since India does have a great climate for this!
